We've created pdf documents from a scanner. I am trying to search for text within this pdf file and it says text not found. I am using the infix demo.

Unless you have also processed the scanned pages with an OCR program, they will not contain text - just pictures of text on pages.
There are various OCR packages available to try, some may have even been provided with your scanner.
Once the OCR process has created real text from your images, you will be able to search it.
